You’ll need:
- 6 large baking potatoes, peeled and sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 quart chicken broth
- ¼ cup butter
- 1 cup half-and-half
- 1½ cups shredded cheddar cheese
- Salt, pepper, chopped chives, crumbled bacon, and sour cream to taste
Instructions:
Place potatoes, onion, garlic, broth, and butter in slow cooker. Cook on high for 4 hours. Stir soup, mashing potatoes slightly until desired texture is reached. Add half and half and cheese and combine. Serve immediately and top with salt, pepper, chives, bacon, and sour cream.
Slow Cooker Mac and Cheese
You’ll need:
- 16 ounces elbow macaroni, dry
- 2 cups whole milk
- 1 (12-ounce) can evaporated milk
- 1 teaspoon garlic salt
- 3 cups shredded cheese
- 2 tbsp butter
- Extra cheese for topping
Instructions:
Add all ingredients to slow cooker. Cook on lowest possible setting for 2-3 hours, stirring occasionally and checking pasta periodically. When pasta is cooked al dente, serve and top with additional cheese.
